As a monounsaturated fat, olive oil actively helps the body defend itself from heart disease by eliminating harmful cholesterol. Our Extra Virgin Olive Oil (EVOO) is FIRST COLD PRESSED from the fruit of the olive tree leaving the color, taste, vitamins and nutrients intact, all natural that has undergone very little processing, making it a top of the line EVOO.
FIRST COLD PRESSED is a chemical free process using only pressure, producing a higher quality olive oil that is lower in acidity. Also, our oils are all filtered, which leads to clearer oil with no residue at the bottom of the bottle.
BALSAMIC VINEGAR
The birthplace of balsamic vinegar is in Modena, Italy, where the production of Traditional Balsamic vinegars are regulated. The grapes ripen on the vine for as long as possible to develop their sugar. The juice or "must" is pressed out of the grapes and boiled down then the vinegar production and aging process begins first, in oak kegs. Vinegar must be aged for at least 12 years in order to be called a Traditional Balsamic Vinegar.

That is why each and every harvest and batch goes through a 3-step process. In addition we do not blindly accept products from our facilities in Italy and take them on face value.
1. Our Producers are required to submit an analysis report on the harvest ensuring the Oil meets all chemical analysis required by the European and US Standards.
2. Then, our In-House Certified Olive Oil Sommelier Performs a Sensory Analysis to ensure the product does not have any sensory defects (i.e. Rancid, Musty, Fusty etc.)
Unlike some of our competitors; the base Olive Oil used in our Infused Extra Virgin Olive Oils are100% Extra Virgin Olive Oil.
3. When the product arrives in our facility, we order a second chemical analysis from a 3rd party lab to ensure what we received is in fact what we sampled and approved in Italy at time of harvest, bringing you the finest 100% Extra Virgin Olive Oils.
